Refettorio Mérida is a community dining room and cultural space in the historic centre of Mérida, Yucatán, Mexico. It is run in collaboration with Food for Soul, founded by chef Massimo Bottura and Lara Gilmore, and Fundación Palace Resorts IAP. The project transforms recovered surplus food from local supermarkets and markets into nutritious meals served to people in vulnerable situations, including people experiencing homelessness, refugees and families. Alongside meals, it offers hygiene services, art-based community programmes and a youth transition programme. Its stated aim is to build a more sustainable and inclusive food system, reduce food insecurity and raise awareness of the social and environmental impact of food waste. Volunteers, guest chefs and local partners support its operations.
