It supports the dairy sector through product development, technical advisory services and specialised training for dairy and cheese professionals, particularly artisan cheesemakers. Its pilot plant of about 800 square metres, located within the Leartiker facilities, is equipped to make all types of cheese and dairy products and is used to build prototypes of new products and to run practical training sessions. Through a collaboration with Mons Formation, the centre acts as a delegation offering cheese-making training across Spain. It also runs research and applied innovation projects with producers, supports daily process, hygiene and labelling compliance for artisan cheesemakers, and offers microbiological analysis of milk and dairy products, nutritional labelling and sensory analysis. Its work covers sheep, goat and cow milk and includes the valorisation of whey.
