Save The Olives is a non-profit association based in Tricase, Italy working on environment & climate, nature & wildlife conservation, heritage.

Save The Olives ONLUS is a non-profit organisation of volunteers based in Tricase, Puglia, southern Italy. It works to counter the Xylella fastidiosa epidemic that has killed millions of olive trees in the Salento area. Its activities include funding and supporting research with the CNR and Forestaforte into Xylella-resistant olive varieties, establishing a screen house and experimental olive grove, protecting monumental olive trees through grafting with resistant varieties, running training courses for grafters, and raising public awareness through events and conferences. The organisation is funded mainly by private donations and adoptions of olive trees.
